The Old Mill dates back to 1752 so historic sensitivity was an underlying principle for the design. HFA was responsible for all aspects of the landscape, and sought to create a series of interconnected spaces which complemented both the character of the mill and the restaurant's contemporary identity.

The approach focused on strengthening the relationship between the building and its surroundings, creating relaxed outdoor spaces that enhance the visitor experience from arrival through to dining. Careful consideration was given to materials, planting and spatial layout, ensuring that the landscape felt both authentic to the site's heritage and aligned with the quality and atmosphere of the restaurant.

Planting was selected to provide year-round interest and create a sense of maturity and enclosure, while durable materials and clear circulation routes support the practical demands of a busy hospitality setting. The result is a landscape that feels integrated, inviting and enduring, helping to establish a strong sense of place for guests throughout the seasons.
